Overnight Oats Are Oh So Good

Looking for a quick and simple breakfast that requires no cooking? Overnight oats are tasty, filling, and a great grab-and-go option. They can even be made on the weekend for the upcoming week. This versatile breakfast can be topped with fresh or frozen fruits, nuts, peanut butter, honey, or anything your heart desires! You can make dozens of varieties with a few basic ingredients and Mason jars. 

Oatmeal is a heart-healthy grain that packs some serious nutritional benefits. According to Medical News Today, oats contain more dietary fiber than any other grain (which helps keep you regular). They also contain essential minerals such as manganese, selenium, phosphorus, fiber, magnesium, and zinc. There are studies that suggest oats may also reduce the risk of coronary artery disease and colorectal cancer. An article published in the American Journal of Clinical Nutrition concludes that diets with plenty of whole-grains are just as effective for lowering blood pressure as anti-hypertensive medication. 

Aside from the health benefits, I’ve noticed that eating oatmeal daily increases my energy, gives me sustained satiety, and is a low-calorie option which is known to contribute to a healthy weight. So, if you’re looking for a simple breakfast makeover that’s sure to boost your well-being, give these recipes a try. You can mix and match throughout the week, or experiment with different toppings. Some of my favorites are blueberries, shredded coconut, and macadamia nuts.  

Basic Chia Seed Overnight Oats

½ cup rolled oats 

½ cup coconut milk beverage (or any milk of choice)

1 Tbsp chia seeds

1 tsp maple syrup

¼ tsp vanilla extract 

3 Tbsp sliced almonds

Combine all ingredients in a Mason jar, stir well, and refrigerate overnight.  

Pumpkin Overnight Oats

½ cup rolled oats

½ cup almond milk (or any milk of choice)

3 Tbsp pumpkin puree

1 tsp chia seeds

1 Tbsp maple syrup

¼ tsp vanilla extract 

2 Tbsp sliced almonds

Combine all ingredients in a Mason jar, stir well, and refrigerate overnight.  

Chocolate Peanut Butter Overnight Oats 

½ cup rolled oats 

½ cup coconut milk beverage (or any milk of choice)

1 Tbsp cacao powder

1 Tbsp peanut butter (or almond butter)

1 Tbsp maple syrup

¼ tsp vanilla extract 

Combine all ingredients in a Mason jar, stir well, and refrigerate overnight.
